After coming to Kyubei you will immediately realize that
you are in a special place. The elegant interior features
modern Italian elite furniture. Pay attention also to an overflowing
vase of flowers on the dampened slate floor in the corner.
The counter is a single magnificent piece of hinoki Japanese
cypress.
Everything is done for you, either by your chef or the discreetly
hovering maiden in kimono who will not let anyone pour their
own sake or shoyu or any other sauce. Another special fact
about Kyubei is that there is no raised barrier between you
and your chef, so you can always see what he is doing with
his knives. You are able to witness how two kinds of anago
eel, for variety, enlivened with just a hint of yuzu zest
are preparing or get the baby scallops touched with lime.
Such famous recipes as uni on rice wrapped with nori were
first conceived at Kyubei. Another beautiful thing is that
Kyubei is not a neighborhood place like most sushiya. The
